It's teatime - Easy peasy recipe that you can enjoy it at the comfort of your home sweet home

It's teatime. Let's have a cup of this beautiful and aromatic Latte specially brewed at the comfort of your home sweet home.
Oopps... sorry..this is neither Latte nor cappuccino that you are craving for.
Ya... it's a cake!🤪 
 
This is another easy peasy recipe besides the previous Ji Dan Gao I posted earlier.

Traditional Chinese Steamed Egg Cake (Ji Dan Gao/Kuih Neng Go 鸡蛋糕)

I grew up eating this ji dan gao 鸡蛋糕 as my mum used to make it very often.  This traditional Chinese steamed egg cake is very easy to make. It only consists of 3 simple ingredients - eggs, flour and sugar.
Ji Dan Gao/Kuih Neng Gao 鸡蛋糕

Ingredients :
- 1 bowl of egg
- 1 bowl of castor sugar (or to taste)
- 1 bowl of plain flour
- 1/3 bowl of cooking oil 
Method :
1)  Using stand mixer, beat  eggs at high speed until light and pale. 

2)  Add in sugar and continue to beat the  egg mixture until the volume increase 2 to 3 times  and the mixture becomes thick and glossy. 

3) Then slowly add the cooking oil and beat until it's well mixed.

4)  Sift and fold in the flour until the egg mixture is well combined. 

5) Pour the batter into greased or lined pan.

6)  Steam for about 25-30 minutes or when a skewer inserted comes out clean.

7) Remove the cake from the pan and let it cool on the rack. 

8) Best serve warm.

It has been quite a while since I last baked cupcakes.  Out of the blue, baking mood set in yesterday, and voila... now I have vanilla cupcakes and coffee cupcakes for breakfast and teatime.

Are You One of Those Who Don't Take Cakes with Eggs Simply Because You Are Health Conscious, Vegetarian or Allergic To It? Try This Simple and Easy to Make Eggless Kurma (Date) Cake

Are you health conscious?  Do not favor eggs, allergic to it or just being a vegetarian?  Love cakes but most commercial cakes have eggs? Fret not! You still can savour your favorite cakes with this simple and easy to make eggless cake.  Besides, it's cheap too if you make it yourself.

Honestly speaking, I have never eaten eggless cakes and when I chanced upon Eggless Cakes & Cookies cookbook by Jamie Jong, and out of curiosity, I just bought the book.  After looking through some of the recipes in the book, I told hubby that all the recipes are actually quite healthy.  Hubby asked me to try one of the recipes and without any hesitation, I chose the easiest recipes and modified it accordingly.  As I still have some kurma (dates) bought during this Ramadan month, I decided to use some. However, after the cake is baked, the slices of kurma sunk to the bottom. Ah... no big deal anyway.  Surprisingly, the cake is moist, soft and fluffy! 

Eggless Kurma Cake
Ingredients :
- 250gm self-raising flour (sifted)
- 170gm unsalted butter (softened)
- 100gm castor sugar
- 120ml evaporated milk
- 5 pcs (or more) kurmas (sliced thinly)  

Method :
1) Cream butter and sugar till light and creamy.
2) Then, gradually add evaporated milk and beat well.
3)  Fold in sifted flour.
4)  Stir in kurma and mix well.
5)  Pour mixture into a greased 7" cake tin.
6)  Bake in preheated oven at 160° C for 1 hour or till cooked.

Isn't this egg free cake is easy peasy to make?  Give this a try and you will be glad you did it!

Easy Peasy and Hassle-Free Apple Cinnamon Muffins

Yes, I am back after being MIA for about a month due to unavoidable circumstances.  Well... work and family is still my top priority and especially when there's a deadline to meet and you are rushing for an urgent project.  
To my fellow bloggers, I will visit your cyberhome as soon as possible whenever I am available and here's a very easy to follow muffins for those who are always in a hurry to prepare something healthy yet yummy for your family.
 

Apple Cinnamon Muffins
Adapted from Cupcakes & Muffins (page 220) with minor modification in red
Ingredients :
- 250g  all-purpose flour
- 1 tbsp baking soda
- 1.5 tsp (1 tbsp) ground cinnamon + extra, for dusting
- 110g caster sugar
- 2 eggs lightly beaten
- 250ml milk
- 160ml light olive oil
- 2 ripe pears (apple) peeled, cored and diced







Method :
1)  Preheat oven to 200. Prepare 18 paper liners in standard muffin pans.
2)  Whisk together flour, baking soda, cinnamon and sugar in a large mixing bowl.
3)  Combine egg, milk and oil, then stir into the dry ingredients until just combined.
4)  Gently fold in two-thirds of apple.
5)  Spoon into prepared pans and top each muffins with remaining apple.
6)  Dust with extra cinnamon and bake for 20 minutes or until golden brown and the center of a muffin springs back when pressed.
7)  Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
