Vegetarians and Non-vegetarians will be all over this 'love it or hate it' dish which is incredibly healthy and nutritious and also Keto friendly

Whenever you run out of idea what to cook for a meatless dish, have you ever think of tempeh?  It is incredibly healthy and nutritious.  Besides being a very popular vegetarian meat replacement as it is rich in protein, probiotics, a wide array of vitamins and minerals, it is quite a versatile ingredient that you can try your hand in anyway you like according to your taste buds.

Besides this Thai Chili Sauce Tempeh with Potato, you can also refer to this simple stir fry tempeh with onions.  Just click at the picture below for the recipe.

Thai Chili Sauce Tempeh with Potato
Ingredients :
- 1 block of tempeh (cut into your desired size)
- 2 potatoes (cut into wedges)
- 1 big red onion
- 1 tomato (cut into wedges)
- 2 cloves garlic (roughly chopped)
- cooking oil (I used coconut oil)
Seasoning : to taste
- 2 tbsp Thai chili sauce 
- salt 
- soy sauce 
- sugar 

Note :  For pure vegetarians and vegans, just omit onion and garlic and substitute it with ginger.

Method :
1)  Heat oil in a wok and fry tempeh till lightly brown and set aside.
2)  Fry potato wedges till lightly brown and set aside.
3)  Saute garlic until aromatic.
4)  Add fried tempeh and potato and stir fry until fragrant.  Add half of the red onion and tomato.  Continue to stir fry till aromatic.

5) Add the seasoning, stir and mix well. If too dry, add 1 or 2 tbsp of water.
6)  Lastly add the remaining red onions and tomato.  Stir and mix well.
7)  Serve hot.

Turmeric Eggplant Rice (Meatless Recipe)

A very simple rice which is easy to be prepared and at the same time healthy and nutritious too.  I had no intention to cook this.  While looking through my fridge, I saw that I still had some brinjals/eggplants and lemongrass.  So, just took out the brinjal and beginning to wash it. As for the lemongrass, I had wanted to use it for a simple stewed chicken.  Oh gosh, I realised that the chicken meat was still in the freezer, ah....  At the spur of the moment, it crossed my mind that in order to make life easier for me, I decided to cook Fragrant Eggplant Rice , the one that I had posted earlier but wanted to have it different.  
So, this is the result of this simple one-pot rice meal!

Ingredients :
- 3 cups of rice (I used brown rice)
- water (the usual measurement  as per your rice cooker model, but less about 1/2" of water)
- 3 brinjals (washed and cut)
- 4 stalks of lemongrass (washed, slit and bruised)
- 1/2 tbsp of turmeric power
- 3 cloves garlic (crushed)
- 1 thumb size ginger (crushed)
- 1" cinnamon stick 
- 1 star anise
- 1 tbsp of ghee/butter (I used ghee)
- salt (to taste)
Method :
1)  Wash rice.  Add water but less about 1/2" of  water of  the usual measurement; depending on the model of your rice cooker.
2)  Add all the ingredients except brinjals and butter.  Stir and mix well and press the cook button; the usual way you cook your rice.
3)  When the rice is just about to cook (just before the cook button signal), add in the brinjals.  Continue cooking or keep warm for about half an hour.

4)  Then, add butter.  Stir and mix well.  Add extra salt if necessary.
5)  Serve warm.
This one-pot meal is great when you are busy but still prefer to have home-cooked food than take-away.

Fried Rice with Apple Cubes (Meatless Recipe)

This is a simple fried rice from scratch.  I had a red apple left and nobody seems to take the initiative to eat it and 2 stalks of almost wilted Chinese Leeks.  It's already end of the week and the next day I needed to replenish my fridge with fresh produce for the following week. Throw???  Better not!!!!  Whatever it is, THRIFTY is the word!  Yes, we need to be thrifty in our spending and throwing food is a big NO NO for me!  
Be creative and innovative in your cooking and you will be surprised you can actually save a lot!  End result? Simple and yummy fried rice for the whole family!
Ingredients :
- 3 bowls of leftover/over night rice (I used brown rice)
- 1 red apple (peeled and cubed)
- 2 stalks of Chinese Leeks (washed and cut)
- 3 eggs (beaten)
- 1/2 mashed salted egg white(I used the leftover from my previous cooking here, and  here,)
- 2 cloves garlic (finely chopped)
- 3 red onions (finely chopped)
Seasonings : (to taste)
- salt
- pepper
- soy sauce
- dark caramel sauce
Method :
1)  Heat oil in a wok. Saute garlic and onion until aromatic.
2)  Add leeks and apple cubes and give it a quick stir.

3)  Add rice and mashed salted egg white.  Stir fry and mix well.

4)  Spread the rice evenly over the wok and pour beaten egg all over the rice.  When the egg has almost set, stir fry until fragrant.
5)  Add seasonings and keep stirring until the rice is well blended with the egg and the seasonings.
Serve hot.
If you don't like this brownish looking fried rice, may be you would be more interested in another version of my fried rice.

Chinese Cabbage Egg Miso Soup (Meatless Recipe)

I like Chinese Cabbage, be it stir fried, braised or soup and will never get bored eating it everyday!  Chinese cabbage is very refreshing especially if you make it into soup.  For this recipe, it's a meatless soup and I omitted anchovies stock and meat.  Hence, I added miso into it.  It's very refreshing and I had it for lunch; just the soup only and without any rice or noodles.  You can add fish balls, prawns, meat or any ingredients that come to your mind.  
Ingredients :
- 1 small Chinese cabbage (washed and cut)
- 3 dried mushrooms (soaked and sliced)
- 1/2 carrot (shredded)
- 1/2 tbsp Chinese Wolfberries/goji berries (washed)
- 2 eggs (beaten)
- 1 thumbsized ginger (crushed)
- 3 cloves garlic (chopped)
- enough water for the soup
- 1 tbsp oil
Seasonings : (to taste)
- 1 tbsp miso
- a dash of salt
- soy sauce
- pepper

Method :
1)  Heat oil in a wok and saute ginger and garlic until aromatic.
2)  Add Chinese cabbage, mushrooms and carrots.  Stir and mix well.
3)  Add water.  Cover and bring to a boil over high heat.
4)  Pour in beaten egg.  Gently stir it.
5)  Lower the heat to medium low. Add miso and Chinese Wolfberries.  Stir and mix well.
6)  Season with salt, soy sauce and pepper.
7)  Serve hot.
Simple, healthy and refreshing soup for your family

Sweet Fragrant Mint Omelette (Meatless Recipe)

As I was flipping through my old collection of recipe magazines (which have been collecting dust, hehehe...), I happened to see a very simple omelette using mint leaves.  I have never tried mint omelette and was telling myself why not give this a try as mint is a very healthy herb and moreover I have homegrown mint leaves.
This recipe is adapted from Y3K (33) pg 9 with some modifications.
As mentioned in the Y3K, mint leaves have medicinal properties especially for those who are prone to have 'windy stomach'.  However, too much mint leaves may cause your dish to taste bitter.  So, don't be 'greedy' ok?
My version or amendments are in red.  Adjust or add any ingredients according to your taste or preference.

Ingredients :
- 50g mint leaves/daun pudina (I used a handful)
- 2 eggs (6 eggs, beaten)
- 1 tomato (cubed)
- 3 fresh Swiss button mushrooms (sliced)
- some oil
Seasonings : (to taste)
- 1/2 tsp salt
- some soy sauce

Method :
1)  Mix all the ingredients together except soy sauce.
2)  Heat some oil in a wok and pour in the egg mixture.
3)  Flip over when the omelette has set.
4)  Fry until both sides are golden brown.  Turn off the heat.
5)  Drizzle some soy sauce to taste.  Stir and mix well. 
Serve.
My children don't like mint leaves but surprisingly they love this mint omelette!  They are asking me to cook this omelette again!!!
Isn't this a good idea to get your children to start eating mint leaves????
