Steamed Scallion Flower Rolls/Buns (花卷)

Last week I harvested a big bunch of scallions from my mini edible garden.  I have been quite eager to try Steamed Scallion Flower Rolls when I first chanced upon it in Facebook. Then, I happened to see a post by Kit quite sometimes back.  In fact, this is one of  the many recipes which I have been procrastinated but this time around, without any hesitation, I went into action and finally, I am happy to say that the buns turned out very successful and delectable too!!!

Ingredients :
- 1/2 packet yeast
- 3 cups pau flour
- 1 cup of warm milk
- 6 tbsp sugar
- ¼ cups vegetable oil ( I used sunflowers oil)

For the glaze:
- 3 tbsp chopped scallions
- 1 small carrot ( shredded) (I omitted)
- ½ tsp salt
- ¼ tsp sugar
- 2 tbsp sesame oil

Method :
1) I used bread machine for the dough. Add ingredients as per your machine instruction to form dough and let it proof.

2) While waiting for your dough to proof in the machine, mix all the ingredients for the glaze and set aside .

3) Knead the dough again before dividing it into 12 egg sized pieces.

4) With a rolling pin, roll each pieces of dough into a long oval. Brush with glaze and make few slits.

5) Twist the dough and shape into a knot.



6) Place on square parchment paper . Cover and proof the buns again for 40 to 60 mins .

7) Steam the buns in steamer for 10 to 13 mins.

The bun is very smooth, soft and fluffy
We had this for lunch...
Best served warm
Great for breakfast too

Happy Mid-Autumn Festival and Simple and Easy Red Bean Paste Snow Skin Mooncake

First of all, to all Chinese, HAPPY MID-AUTUMN FESTIVAL and happy family reunion.  

Today is Mid-autumn festival but I had already celebrated it yesterday as it was a Sunday and it was also my eldest girl's birthday.  So, to make things easier and convenient for everyone, we had a double celebration yesterday.


   For my darling girl's birthday, I baked Canadian Lemon Pound Cake  (<-- click  here for the recipe) for her.
In fact it was my first time baking a birthday cake for my girl.  In order to give her a surprise, I baked it when she was away for her ballet lesson.  By the time she arrived home, the cake was ready and of course, she was thrilled to see her first home baked birthday cake from her mum!!

Not only that, I had also made my first snow skin mooncake when the lady boss of the bakery supplier shop taught me how to do it.  So, with her ready recipe, I gave this a try, and I am glad I did it! Never know it's so easy to make snow skin mooncake.  
Ingredients for snow skin :  (I made 16 minis and 2 big snow skin mooncakes)
- 100gm kaofen (sifted)
- 80gm icing sugar (sifted)
- 30gm shortening
- 150ml iced water

Filling :
- 500gm red bean paste (store bought)
(divide into 16 portions of 25gm each and 2 portions of 50gm each.  Shape into balls)

Method :
1)  Mix kaofen, icing sugar and shortening until well combined.
2)  Add iced water and use a spatula to combine the mixture until dough is formed.
3)  Divide dough into 16 portions of 15gm each (for minis mooncakes) and 2 portions of 30gm each of dough (for big mooncakes).
4)  Flatten each dough with rolling pin and wrap it around 1 piece of filling.
5)  Lightly dust the ball of dough with kaofen and press the ball into a mooncake mould.  Press out.


6)  Keep mooncakes in an air-tight container and chill in the fridge before serving.

Simple Sweet Fragrant Omelette


This is a very simple and healthy breakfast which my children like it.  As long as it's not plain bread with jam and butter, they will be grinning from ear to ear. It could be anything; sandwich or just omelette.  We have half-boiled free ranged chicken eggs almost every morning too and they are more or less being 'forced' to eat!  So this type of simple omelette for breakfast is enough to bring smiles to their faces as they know that they would not be able to have any homemade bread, cakes, cookies or buns from their mummy.  Sigh.... I think it's high time for me take up simple baking...:) 
Simple but healthy breakfast consists of simple omelette with barley green beans dessert

Ingredients :
- 6 eggs (beaten and mixed with seasonings)
- 3 cheesy hot dogs (sliced)
- 1 big tomatoes (sliced)
- 1 big onions (chopped)
- some fresh basil
- some butter for frying

Seasonings : (to taste)
- salt
- pepper
- soy sauce

Method :
1)  Heat butter in a pan or wok.  I used happy call pan.
2)  Saute onions and hot dogs until fragrant and spread it evenly all over the pan.
3)  Pour in beaten egg and cover the lid.
4)  Cook over slow medium heat.  When the omelette is semi-cooked, add tomato and basil.
5)  Slow cook both sides until slightly brown.
6)  Dish out and serve immediately with tomato sauce.
It's quick, easy and simple breakfast!

Refreshing Aloe Vera Barley Drink

This is another simple healthy drink which I used to prepare.  Previously, I had posted a  healthy aloe vera  recipe and my children like it very much.  However, this time it's just a simple and easy but healthy drink suitable for all.

Ingredients :
- 1 cup of cubed aloe vera gel 
- 50g barley (washed)
- honeycomb sugar (to taste)
- some pandan leaves (washed)
- enough water

Method :
1)  Add barley into a medium sized pot filled with water. 
2)  Boil for about 15 minutes. Then lower the heat and let it simmer until barley is soft.
3)  Add honeycomb sugar and pandan leaves.  Continue to simmer for another 10 minutes or until the sugar is dissolved.
4)  Add aloe gel and stir.  Turn off heat.
5)  Serve hot or chilled it before serving.
It's very refreshing especially when served chilled.  Do enjoy :)
