Simple Stir Fried Chayote Shoots/Dragon Beard or Dragon Whiskers (龍鬚菜) with Dried Shrimps

Chayote shoots and fruits are believed to have diuretic, cardiovascular and anti-inflammatory properties. It's also said that tea made from the leaves has been used in the treatment of arteriosclerosis and hypertension, and to dissolve kidney stones.
My family eat  chayote  and its shoots from time to time.  Chayote shoots also known as 龍鬚菜 in Chinese and it means dragon's beard or dragon's whiskers.  
It's very delicious even with just simple stir fried.  I usually stir fried it with chili paste, sambal belacan and at times just a simple stir fried with dried shrimps or anchovies.  It's very yummy and my children who don't really fancy vegetables, love it.  Besides, it's very healthy and delicious too.

Ingredients :
- 1 bunch of chayote shoots (cut according to your desired length)
- 1 tbsp of dried shrimps (washed)
- 1 red chili (sliced)
- 3 cloves garlic (crushed)
- oil
-salt (to taste)
Method :
1)  Heat oil in a wok and saute garlic and dried shrimps until aromatic.
2)  Add chayote shoots and stir fry until cook.  Add water if too dry.
3)  Dish up and serve.
This simple stir fried is so healthy and nutritious

Simple Pan Fried Norwegian Blue Mackerel with Pandan Leaves (Screwpines)

Hubby bought 2 packets of Norwegian Blue Mackerel and of course I was grinning from ear to ear as my children love this fish very much.  It's very yummy just with simple pan fried and this time I pan fried it with pandan leaves.  
Ingredients :
- 3 pcs of mackerel fillet or any fish depending on your preference (washed, slit and marinated with salt for 30 minutes)
- 3 pandan leaves
- Japanese Black Sesame Sauce
- 1 tbsp oil
Method :
1)  Wrap pandan leaves around the marinated fish.  
2)  Heat a tbsp oil in a pan and arrange the fish.  Pan fry over medium low heat.
3)  Pan fry until both sides are slightly brown or cooked.  
4)  Turn off the heat.  Add Japanese black sesame sauce over the fish and quickly pan fry both sides with the heat off.  Remember not to overheat the fish or else the sauce will get burn pretty fast.
5)  Dish up and serve.
Very easy to prepare and yummy too

Nutritious Chicken Soup with Dried Figs (无花果)

According to Tonic Soups for Vitality by Madam Choong Su Yin, dried figs is neutral in nature and tastes bitter sweet.  Figs from America possess better quality.  Figs helps in preventing cancer such as lung cancer and gastrointestinal cancer.  It improves digestion, increasing breast milk, relieves swelling and is anti-inflammatory. 

This soup is easy to prepare.  It's healthy and nutritious too.  

Ingredients :
- 1 whole chicken leg 
- 8 dried figs
- 3 red dates
- 1 tbsp Chinese Wolfberries
- 4 bowls of hot water
Seasonings : (to taste)
- a dash of salt

Method :
1)  To double-boil, first boil water in a big pot or wok.
2) Then put all the ingredients into a Chinese ceramic pot and cover.  I used vision pot.
3)  When the big pot of water is boiled, place the ceramic pot (vision pot) of ingredients into it and steamed over high heat for 1/2 hour.
4)  Lower the heat and steam for about 2 hours.
5)  Season with salt and serve hot. 
A very healthy and nutritious soup for the whole family
We usually finished all the soup and the ingredients but not the meat.
